Sweet Potato Pie With Candied Nut Cream

You will need:

1 pound sweet potatoes

12 graham crackers

2 tablespoons granulated sugar

5 tablespoons melted unsalted butter

½ teaspoon kosher salt

14 ounce can sweetened condensed milk

2 large eggs

½ teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon ground ginger

Pinch of ground cloves

1 cup heavy cream

½ cup chopped candied nuts or peanut brittle

Then you will need to:

  1. Heat your oven to 400 degrees. Pierce the potatoes with a fork, place on a rimmed baking sheet, and bake until very tender, about 50 to 60 minutes. Let cool and halve and scoop out the flesh.
  2. Recue the oven to 350 degrees. Mix together the graham crackers in a food processor until fine crumbs form. Add the sugar, butter, and ¼ teaspoon salt and pulse until moist. Press the mixture into the bottom and sides of a 9-inch pie plate. Place on a rimmed baking sheet and bake until dry and set, about 10 to 12 minutes. Let cool.
  3. Wipe out the food processor and add the sweet potato, condensed milk, cinnamon, eggs, ginger, nutmeg, cloves, and remaining salt and process until smooth. Pour the mixture into the pie crust and bake until the center is set, about 45 to 55 minutes. Let cool completely.
  4. Before serving, beat the cream on medium high heat until soft peaks form. Gently fold in the nuts and serve with the pie.
